Summer is in full swing, and what better way to enjoy it than with a delicious poolside BBQ? At Bremner Pool, we love combining the joy of swimming with the pleasure of great food. This month, we’re excited to share a highly-rated recipe for Grilled Hawaiian Chicken Skewers that is sure to be a hit at your next pool party. These skewers are packed with flavour, easy to prepare, and perfect for enjoying by the pool.
Ingredients
- 1 kg (2.2 lbs) of boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
- 2 red bell peppers, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 1/4 cup brown sugar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Wooden skewers (soaked in water for at least 30 minutes)
Instructions
1. Prepare the Marinade:
• In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, olive oil, garlic, ginger, rice vinegar, and sesame oil until well combined.
2. Marinate the Chicken:
• Place the chicken pieces in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight, for maximum flavour.
3. Assemble the Skewers:
• Preheat your grill to medium-high heat.
• Thread the marinated chicken, pineapple chunks, red bell peppers, and red onion pieces onto the soaked wooden skewers, alternating between each ingredient for a colourful and tasty presentation.
4. Grill the Skewers:
• Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
5. Serve and Enjoy:
